Jerky & Snack Stix

Jerky:

Our Jerky is made with whole-muscle Beef Round. It is marinated, racked, and smoked overnight in our state-of-the-art German Smokehouses.

  • Midwestern Beef Jerky - classic salt and pepper jerky

  • Elburner Beef Jerky - extra smokey with garlic, coriander, and black pepper

  • Teriyaki Beef Jerky - sweet soy and ginger

  • Mountain Beef Jerky - mild with a touch of pepper

  • Tex Mex Beef Jerky - our spiciest jerky - red pepper, cumin, and chili powder

  • Bloody Mary Beef Jerky - Everything in a Bloody, minus the booze….. on beef

  • Sweet and Spicy Beef Jerky - spicy bbq flavor (used in our Jerky Dip!)

  • California Heat Beef Jerky - soy and worcestershire sauce with crushed red pepper

  • No Carb Beef Jerky - salt and pepper with no added sugar

  • Buffalo Trail Style Jerky - thick sliced, and slow smoked on skewers. Made with American Buffalo top round. (Elburner spice blend)

  • South African Style Biltong - thick cut and hung dry with cracked coriander

  • Turkey Teryaki Jerky - sweet soy and ginger, made with whole muscle turkey breast

Snack Stix:

Fermented Stix - Quick culture-fermented for a tangy flavor and longer shelf life. Very low residual sugar, and lots of Hickory smoke.

  • Bier Stix - our best seller and most award-winning. A spicy garlic summer sausage made with pork and beef. This product is also available in single packs and served in many local breweries and wholesaled to other local retail stores.

  • Summer Sausage - traditional German recipe (Bier Stix minus the kick)

  • All Beef Summer Sausage - Summer Sausage made with 100% beef

  • Tabasco Stix - Summer Sausage with garlic and spicy fermented tabasco peppers (new in 2022!)

  • Hungarian Hunter - pork and beef with garlic and paprika

  • Buffalo Landjäger - mild and lean American Buffalo with a touch of pepper and caraway

  • Venison Summer Sausage - classic recipe, made with Canadian Elk

  • Old Fashioned Landjäger - a dried and cold smoked salami stick with a touch of pepper and caraway

  • Honey Peperoni Stix - a dried and cold smoked salami stick with real honey

Non-Fermented Stix - Citric acid added for flavor and shelf life. Gently smoked with Hickory.
