  • Old fashioned Loaf - classic German style deli meat. Course ground with lots of garlic and famous blackened top, baked in a loaf shape

  • Olive Bologna - German Bologna recipe with Spanish Olives

  • Pickle and Pimiento Loaf - German gherkins and red pimientos chopped up and mixed into bologna. Amazing!

  • Red Pepper Bologna (Paprika Lyoner) - German bologna recipe diced red pimientos and a little extra garlic (used on our German sub sandwich)

  • Beer Salami - pork and beef deli salami with garlic and whole mustard seed

  • Summer Sausage - our classic German recipe in a larger format for sandwiches

  • Deli Coppa - pork coppa muscle, cured and smoked. Spicy Italian seasonings. (used in our Italian Sub sandwich)

  • Bier Schinken - German style made with fresh onions. Diced ham pieces bound together with mild bologna. Great as a pre-lunch snack, and a nice economical addition to a charcuterie board

  • Black Forest Ham - extra smokey ham, with a special brine unlike our other hams.

  • Brisket Pastrami - spiced and smoked corned beef

  • Roast Beef - oven roasted, medium rare. Ream’s Rub #2 on the outside.

Charcuterie:

Charcuterie/Salumi products take a long time to make. They require lots of attention and focus, and due to the vast amount of other products that we produce, we sometimes may be out of something.

Deli Salamis for slicing:

  • Elburner Salami - our classic mild salami, with a touch of smoke

  • Rum & Garlic Salami - course ground with garlic-infused dark rum, with a touch of smoke

  • Peperoni - a real dried peperoni - great on pizza and Italian subs

  • Hungarian Salami - smoked salami with garlic and paprika

  • Soppressata - course-ground, spicy pork salami

Small Diameter Salamis (slice at home)

  • Finnochiona - small diameter, sold by the piece - whole toasted peppercorns with fennel and a hint of curry

  • Chorizo Vela Salami - Spanish-style with sweet paprika, in small diameter hog casing

  • Salame Piccante - spicy Italian style hot salami, with fennel and red pepper - great on pizza

  • Garlic Salami - mild and garlicky - great with mustard and pickles

Whole Muscle Charcuterie

  • Westphalian Ham - dry cured, cold smoked, gently cooked boneless ham

  • Speck - Italian style spiced, smoked, and aged boneless ham

  • Artisan Capicola - Italian style spiced and aged pork neck muscle

  • Pancetta - Italian style spiced and aged pork belly - great in pasta and soup

  • Guanciale - Italian style cured and aged pork jowl - famously used in Pasta Carbonara

If you are coming out to the shop and your heart is set on one of these, please call to confirm availability!

  • Renderwurst - a local favorite. Braised beef chuck and onions with oats and spices. Make little patties with it and fry in butter for breakfast.

  • Mettwurst - German style raw sausage for spreading on toast in the morning. (safe to eat raw - made with certified pork)
